Healthy take on good old banana and blueberry bread!

   

                                           

 

Here is a fresh take on an old favourite.  Banana and Blueberry bread skips all the butter but keeps the flavour.

What you'll need:

  • 1 cup mashed banana
  • 12g fresh blueberries
  • 1/2 cup caster sugar (110g)
  • 2 medium eggs, lightly beaten
  • 1/4 cup skim milk (60ml)
  • 1/4 cup olive oil (60ml)
  • 3/4 cup wholemeal self-raising flour (120g)
  • 1/3 cup white self-raising flour (100g)

How to make it:

  1. Preheat oven to 190 deg C or 170 deg C for fan-forced
  2. Lightly spray a 22cm x 12cm loaf tin with oil and line with baking paper
  3. Combine banana, blueberries, sugar, egg, oil and milk in a large bowl
  4. Sift in flours, returning husks to the bowl and stir until all ingredients are just combined
  5. Spoon mixture into prepared tin
  6. Bake for 1 hour or until cooked when tested with a skewer
  7. This bread is suitable to freeze for up to 2 months
