Here is a fresh take on an old favourite. Banana and Blueberry bread skips all the butter but keeps the flavour.
What you'll need:
- 1 cup mashed banana
- 12g fresh blueberries
- 1/2 cup caster sugar (110g)
- 2 medium eggs, lightly beaten
- 1/4 cup skim milk (60ml)
- 1/4 cup olive oil (60ml)
- 3/4 cup wholemeal self-raising flour (120g)
- 1/3 cup white self-raising flour (100g)
How to make it:
- Preheat oven to 190 deg C or 170 deg C for fan-forced
- Lightly spray a 22cm x 12cm loaf tin with oil and line with baking paper
- Combine banana, blueberries, sugar, egg, oil and milk in a large bowl
- Sift in flours, returning husks to the bowl and stir until all ingredients are just combined
- Spoon mixture into prepared tin
- Bake for 1 hour or until cooked when tested with a skewer
- This bread is suitable to freeze for up to 2 months
