So overdid it over the long weekend? Want to give a little back to your body? Try our Green Salad, if you are being really good you can leave out the Feta and substitute the Greek yoghurt with a little more oil and lime juice and/or use almond butter to thicken. But after a long weekend your body probably needs the extra calcuim.
Salad Ingredients
- 4 cups spinach
- 1-2 cups snow pea shoots
- ½ cup feta cheese
- ½ cup almonds, crushed or chopped
- 1 avocado, cut into chunks
Green Goddess Dressing
- ½ jalapeño pepper
- ⅔ cup Greek yogurt
- Juice from 1 lime
- ¼ cup olive oil
- ½ teaspoon salt
- 1 tablespoon agave nectar
- ½ teaspoon minced garlic
- ½ cup packed coriander leaves
- 2 shallots
INSTRUCTIONS
- Puree all the dressing ingredients together, adding the coriander last and stopping when the texture feels right to you.
- Toss the salad ingredients together with dressing; serve immediately.
